Another great use for bananas

I love bananas! I used them for the first time in my french toast batter...it was so good! I simply substituted a mashed banana for most of the milk. Do you all have any good recipes using bananas?

Oh my goodness... I have a recipe from Emeril (who I usually shun for his not-so-healthy recipes) for Bananas Foster French Toast. Matt made it for me for mother's day this year. SO GOOD. I will post the recipe later.

Really easy almost too easy...

Just yesterday, I had two bananas that needed to be eaten that day. You know the kind, just on the verge of bad but still on the good side. I peeled them both, put them in a large glass with milk and blended them with our hand mixer. I took two bendy straws, plunked them in and shared the drink with Savannah. No need for sugar, it's so sweet just as is. I let her have as much as she wanted and about left me with none! She'll be two on Jan. 19th. I like that drink when our fridge is about bare, but still have bananas and milk. I've also put in chocolate syrup or just a smidge of vanilla extract - I usually go over board on that, so then it doesn't taste so good. If we happen to have ice cream that's always a plus on the taste buds!

I have been using bananas in my pancake batter for awhile..I didn't know you could do the same for french toast...can't wait till Christina posts the recipe!

Okay...with the cream, butter and rum, its not the healthiest recipe, per se, but its super yummy.

Oh and by the way, thank you, Stephanie, for turning us on to the banana/berry salad. I'm not sure if its yours or Carol's idea, but we love it. One or two bananas + a bag of frozen mixed berries = yummy!

Sometimes I add other fruits that are on their way out to the banana goo. Apples and oranges are yummy too. It's a nice way to eat the fruit that's a little too ripe.
